Potato:1 big(Peeled,Boiled n cubed)
Carrot:1(Peeled,cut n boiled)
Peas:1 cup(I Used Frozen Peas u can even use bolied fresh peas)
Beaten Curd:1.5 cup
Curry Leaves:8-10 leaves
Coriander Powder:1 spn(Increase if u want it more spicy)
Garam Masala Powder:Depending on ur taste
Salt n Chiili Powder:To Taste
1.Heat a skillet and add oil,when hot add cumin seeds and when it splatters add hinge,turmeric powder and fry for a min.
2.Now add grated ginger and garlic fry till the raw flavor is removed,add curry leaves, chopped onions and fry them till onion become smooth,now add the chopped tomatoes give a good mix and cover it with a lid and cook till tomatoes turn smooth.
3.When Tomato turns smooth and leaves oil,add coriander powder,garam masala powder and chilli powder,mix all the spices well and fry for 2 mins.
4.Add the beaten curd,mix well and let it cook on low for 2 mins.
5.Finally add the cooked veggies(potato,carrot n peas).Mix well and cook it on low for 5 mins so that the veggies absorb the juices and get good taste.
6.Garnish it with chopped cliantro.
7.Serve it hot with any paratha,chapathi or Jeera Rice.
U can add the veggies to ur choice..U can even add beans,cauliflower.I added them to my availabilty.
