I'm very lazy these days after a long vaccation in Vegas.I'm not in a mood to work much on preparing food,but atleast have to cook something for my Hubby so I made just different rice items for the last four days which goes with simple Raitha.Here is one among the four rice items.Kobbarannam(Cocount Rice).This is the traditional way of making,I learnt this recipe from my mom.Actually my mom learnt this from my grandma who used to do it whenever she had unexpected guests at home for lunch/dinner.This is a very simple dish and can be made in no time if u have fresh coconut at home.
Coconut Rice is also made by cooking rice with coconut milk instead of Water.It is also delicious for that recipe Click Here,but the one which I'm sharing now is very easy.
Here goes the recipe.
Grated Coconut:1 cup (Preferably Fresh)
Rice:1 cup(cook it by adding 2 cups of water and let it cool)
Cumin Seeds:1.5 spn
Chenna Dal:2 spns
Urad Dal:1.5 spn
Mustard Seeds:1 spn
Red Chillies:3 no(cut)
Broken Cashew: 6-8 no
1.In a pan add oil,when hot add cumin seeds and let them splatter,now add chenna dal,urad dal,mustard seeds ,broken cashew and fry till they turn golden color.
2.Now add the cut green chillies,red chillies,curry leaves and fry for 2 mins,at this time add the freshly grated coconut ,add salt mix well and fry for 3-4 mins and turn off the flame.Let it cool.
3.Finally add this coconut mixture to the cooked rice,mix evenly and now its ready to serve.
